Tropical Rice Pudding.This time of year, I find that just using the word tropical in a recipe can be helpful to my mood. Rice pudding has always been a soothing treat for my son with acid reflux disease. The coconut milk and pineapple in this recipe will help transport you to warmer places.
Ingredients:
4 cups coconut milk (you can find rice milk in a room-temperature carton in almost any grocery store)
1/2 cup basmati rice
3 Tbs. granulated sugar
1 tsp. pure vanilla extract
1/4 tsp. salt
1 small can crushed pineapple
1 Tbs. honey
1/2 cup chopped cashews
Directions:
In a medium heavy-bottomed saucepan, bring the milk, rice and sugar just to a boil, immediately reducing the heat and stirring frequently. Simmer until the rice is tender and the milk is mostly absorbed (about 20 - 25 minutes). Remove the pudding from the heat and stir in the vanilla and salt. Spoon it into 4 bowls, top with the pineapple and drizzle with the honey and cashews. Serve warm or cold.
